          The restaurant opened by Dan Barber and Juan Cuevas in the heart of Greenwich Village is one of the pioneers of the farm-to-table concept. Blue Hill is also one of the world's 50 Best Restaurants.

Here they celebrate the ingredients of a local agriculture and respectful of the environment. They serve seasonal fruits and vegetables. Many products are sourced from Hudson Valley or Blue Hill Farm farms around the restaurant, in Massachusetts.

 

Whether you choose a dish à la carte or for the Farmer's Feast, the tasting menu in five services, we find the same type of food: a cuisine that focuses on the flavours through quite simple by gastronomic recipes, removed from all superfluous technicalities or claims.
